Caroline Glover
owner / chef de cuisine
Caroline Glover is the chef and co-owner at Annette, the award-winning restaurant she opened in 2017.
The 2022 James Beard Foundation Award winner for “Best Chef: Mountain,” Caroline was nominated in the same category in 2020 and earned semi-finalist nominations in 2018 and 2019. In 2018, Annette was a semi-finalist in the “Best New Restaurant” category.
Caroline and her husband Nelson also own the oyster, cocktail and wine bar Traveling Mercies, which was a 2025 semi-finalist for the James Beard Foundation’s Best New Bar award and was named one of Esquire Magazine’s Best Bars in America in 2024.
Nelson Harvey
director of operations
Nelson is the co-owner of Annette and Traveling Mercies, and is also Caroline’s husband. He may not cook or make drinks, but Nelson does much of what’s required to keep the restaurants running, including employee and vendor management, strategic planning, systems design and implementation, financial tracking, hiring, tax compliance and marketing. He also works the floor at both restaurants periodically and does handyman work of dubious quality. Before opening the restaurants, Nelson worked as a journalist, editor, and private investigator.
Jacob Taggs
executive chef
Jake applied for Annette’s bar manager position when he was 19 and just finishing culinary school at Johnson and Wales University in Denver. Although he didn’t get that job, he was hired as a part-time brunch cook. Since then, he has worked nearly every position in the restaurant, as a host, back-wait, line cook and sous chef. Today, Jake oversees Annette’s kitchen as Caroline’s right hand man. He also spearheads one of Annette’s most beloved annual traditions, The New Year’s Eve Scandinavian Brunch. Jake is good at finding scrappy ways to fix broken kitchen equipment, at least temporarily. He is known to dance and say “that’s delightful!” when he eats or drinks something he really likes. In his spare time, he loves gardening and hanging out with his dog, Bruce.
Daniel Seibel
general manager
Dan has been Annette’s general manager since day 1. If you’ve been to Annette, he’s almost certainly greeted you, bussed your table, opened your wine, or just stopped by for a chat. Dan wrote the book on the warm hospitality that Annette is known for. He walks fast, and talks faster. In his more than eight years at Annette, Dan has done everything from setting up new restaurant systems to slinging burgers in the parking lot to planning and executing wine dinners. In addition to managing the front-of-house staff and handling administrative duties, Dan also curates Annette’s wine list. A native of Cincinnati, he loves Cincinnati chili and the Cincinnati Reds. He also loves plants.
