The Saucy Octopus Patatas Bravas at Annette

In March 2017, Eater Denver featured Annette’s standout dish: the saucy octopus patatas bravas. Chef Caroline Glover, inspired by her travels in Spain, combined two traditional versions of patatas bravas—one with red tomato sauce and the other with aioli—into a single, flavorful creation. The dish showcases wood-fire grilled octopus atop crispy-on-the-outside, soft-on-the-inside Nicola potatoes from Rocky Mountain Farms, generously dressed with house-made roasted garlic aioli and romesco sauce. Glover’s meticulous approach involved testing numerous variations to perfect the recipe, reflecting her commitment to seasonal, scratch-made cuisine.
